Cheese cake -mango




Salam Aidil Adha pada semua yg mengikuti blog Kbie. KBie perlu mohon kaaf kerana terlalu lama membiarkan blog tidak ceria tanpa khabar berita... Bukan apa.. mulanya nak mengumpul bahan baru biar banyak sikit baru nak update, tapi bila dah sibuk2 dengan orders dan kerja2 tak perasan sudah terlalu lama.

Apapun, untuk tidak menghampakan kali ini Kbie akan berkongsi resepi yang diambil dari buku Amy Heng, buku ni memang dah macam kitab Kbie, dah lunyai tp resepi dia yang Kbie try semua jadik2 belaka.. sedap dan ala-ala bakery ternama 'resepi rahsia' ... hehe.

Cheese cake ni sebenarnya ialah favourite KBie sebab rasa mango dia pada cream cheese dan juga puding toppingnya.. sangat best!!!doter Kbie, Camelia bake dan hadiahkan kek ni sempena hari lahir Kbie, 15 hb November yang lepas...tq darling mama love u soooo muccchhh.. muahs!!

Mango CheeseCake

Vanilla sponge cake for base
(beli jer kat bakery, sponge cake mix 500 g, ikut directions dia dan bake dalam 8 inch tray.)
Put aside.

Cake side panel
270g egg white
80 g castor sugar
130g superfine flour
10 g custard powder
350 g corn flour
orange colouring

Pre heat oven 200 deg C and line baking tray with parchment paper.
1.Whisk white egg at high speed
2.Add sugar, both flours and custard powder. Divide cake into 2 and colour one orange and the other plain. Place batter into 2 piping bags.
3.Pipe out the two batter vertically and alternate the colour. Bake for 10 minutes. Cut into 21/4 in stripes.

Filling
350 ml mango puree
250 g cream cheese at room temp
350 ml UHT whipping cream
2 1/2 tbsp of halal gelatine(dissolve in 100 ml of orange juice,double boil till clear)
80 g castor sugar (I used icing sugar)
1 ripe mango, cubed (I ve omited this sebab tak jumpa, bukan musim mango,hehe)

1. Beat cheese and sugar, add mango puree,whipping cream,gelatine, and cubed mango.

Pudding topping
120 ml puding mix
500 ml water

How to assemble cake.

1. Place sponge cake as base. Cut panels and place along side of baking tray.
2. Pour cream cheese batter. Chill overnight.
3. As soon as the cream cheese harden, prepare pudding by boiling water and adding pudding mix. Stir and pour on top of cream cheese. Chill till harden before serve.
